Ingredients

  • โ–ช๏ธ 4 boneless, skinless chicken breasts or thighs

  • โ–ช๏ธ ยผ cup olive oil

  • โ–ช๏ธ ยผ cup grated Parmesan cheese

  • โ–ช๏ธ 4 cloves garlic, minced

  • โ–ช๏ธ 1 tbsp lemon juice

  • โ–ช๏ธ 1 tsp dried Italian seasoning

  • โ–ช๏ธ ยฝ tsp salt

  • โ–ช๏ธ ยฝ tsp black pepper

  • โ–ช๏ธ 1 tbsp chopped fresh parsley (for garnish)

  • โ–ช๏ธ Extra grated Parmesan (for topping, optional)


Instructions

  1. Make the marinade: In a bowl, whisk together olive oil, Parmesan, garlic, lemon juice, Italian seasoning, salt, and pepper.

  2. Pound the chicken lightly for even thickness, then place it in a large resealable bag or shallow dish. Pour marinade over chicken and coat well.

  3. Marinate for at least 30 minutes, or up to 4 hours in the fridge for extra flavor.

  4. Preheat your grill to medium-high heat (around 400ยฐF / 200ยฐC). Lightly oil the grates.

  5. Grill the chicken for about 5โ€“7 minutes per side, depending on thickness, until nicely charred and internal temp reaches 165ยฐF (74ยฐC).

  6. Remove from grill, rest for a few minutes, then sprinkle with extra Parmesan and fresh parsley.
