3 cups all-purpose flour

3/4 tsp baking soda

1/4 tsp baking powder

1 tbsp ground ginger

1 tbsp ground cinnamon

Wet Ingredients:

3/4 cup (1 1/2 sticks) unsalted butter, softened

1/2 cup packed brown sugar

1 large egg
-
1/2 cup molasses (unsulphured)

1 tsp vanilla extract
Instructions
1. Make the Dough:

In a large bowl, whisk together dry ingredients: flour, baking soda, baking powder, spices, and salt.

In another large bowl, beat the butter and brown sugar until light and fluffy (about 2 minutes).

Add the egg, molasses, and vanilla, and mix until combined.

Gradually stir in the dry ingredients until a thick dough forms.
2. Chill the Dough:

Divide dough in half, flatten into disks, and wrap in plastic.

Chill for at least 1 hour (or up to 2 days) — this makes rolling easier and helps cookies hold their shape.
3. Roll and Cut:

Preheat oven to 350°F (175°C).

Roll dough on a lightly floured surface to about 1/4-inch thickness.

Cut into desired shapes (gingerbread men, stars, trees, etc.).
4. Bake:

Place cookies on parchment-lined baking sheets.

Bake for 8–10 minutes, or until edges are set and centers are slightly soft.

Cool on pan for 2 minutes, then transfer to a wire rack.
5. Decorate (Optional):

Once completely cool, decorate with royal icing, sprinkles, or sanding sugar.
