Instructions

1. Make the Dough:

  • In a large bowl, whisk together dry ingredients: flour, baking soda, baking powder, spices, and salt.

  • In another large bowl, beat the butter and brown sugar until light and fluffy (about 2 minutes).

  • Add the egg, molasses, and vanilla, and mix until combined.

  • Gradually stir in the dry ingredients until a thick dough forms.

2. Chill the Dough:

  • Divide dough in half, flatten into disks, and wrap in plastic.

  • Chill for at least 1 hour (or up to 2 days) — this makes rolling easier and helps cookies hold their shape.

3. Roll and Cut:

  • Preheat oven to 350°F (175°C).

  • Roll dough on a lightly floured surface to about 1/4-inch thickness.

  • Cut into desired shapes (gingerbread men, stars, trees, etc.).

4. Bake:

  • Place cookies on parchment-lined baking sheets.
