2 3/4 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

1 cup (2 sticks) unsalted butter, softened

3/4 cup granulated sugar

1 large egg
-
1 1/2 tsp vanilla extract

1/2 tsp almond extract (optional but recommended for flavor)
Instructions
1. Make the Dough:

In a bowl, whisk together flour, baking powder, and salt.

In a large mixing bowl, beat butter and sugar until light and fluffy (about 2 minutes).

Add egg, vanilla, and almond extract; mix well.

Gradually beat in dry ingredients until dough forms.
2. Chill the Dough:

Divide dough in half, flatten into discs, and wrap in plastic wrap.

Chill for at least 1 hour (or up to 2 days).
3. Roll & Cut:

Preheat oven to 350°F (175°C).

Roll dough on a floured surface to 1/4-inch thickness.

Cut into shapes with cookie cutters and place on parchment-lined baking sheets.
4. Bake:

Bake for 8–10 minutes, until edges are just barely golden.

Cool on the pan for 2 minutes, then transfer to a wire rack.
