Instructions

Preheat oven to 425°F (220°C). Lightly butter and flour two 6-oz ramekins (or spray with non-stick spray and dust with cocoa powder).

Melt butter and chocolate: In a microwave-safe bowl, melt butter and chocolate together in 20-second intervals, stirring between, until smooth. Let cool slightly.

Mix eggs and sugar: In a separate bowl, whisk egg, egg yolk, sugar, and vanilla until thick and pale.

Combine: Slowly pour in the melted chocolate mixture, whisking continuously. Then gently fold in flour and salt until just combined.

Pour batter evenly into prepared ramekins. Place ramekins on a baking sheet.

Bake for 11–13 minutes, until edges are firm but the center is still soft.

Cool briefly for 1–2 minutes, then run a knife around edges and invert onto plates.
