🥗 Cucumber Tomato Salad – Fresh, Flavorful, and Easy

Ingredients

  • ▪️ 2 cups cherry or grape tomatoes, halved

  • ▪️ 2 medium cucumbers, sliced (peel if desired)

  • ▪️ ¼ small red onion, thinly sliced

  • ▪️ 2 tbsp chopped fresh parsley or basil

  • ▪️ 2 tbsp olive oil

  • ▪️ 1 tbsp red wine vinegar or lemon juice

  • ▪️ ½ tsp salt

  • ▪️ ¼ tsp black pepper

  • ▪️ Optional: ½ cup crumbled feta or mozzarella balls


Instructions

  1. Prepare veggies: In a large bowl, combine halved tomatoes, sliced cucumbers, and red onion.

  2. Make dressing: In a small bowl, whisk together olive oil, vinegar or lemon juice, salt, and pepper.

  3. Toss salad: Pour dressing over vegetables and toss gently to coat.

  4. Add herbs and extras: Mix in fresh parsley or basil, and feta or mozzarella if using.

  5. Chill or serve: Serve immediately, or chill for 15–30 minutes for deeper flavor.
