Almond Coconut Energy Balls: A Quick and Healthy Snack for Any Time of Day

1 cup almond butter (or peanut butter)
1/2 cup shredded unsweetened coconut
1/4 cup honey or maple syrup
1/4 cup ground flaxseeds
1/4 cup rolled oats
1/2 teaspoon vanilla extract
Pinch of salt
1/4 cup mini dark chocolate chips or cacao nibs (optional)


Instructions

  • In a large bowl, combine almond butter, shredded coconut, honey, flaxseeds, oats, vanilla extract, and salt.

  • Stir until well combined. If desired, add chocolate chips or cacao nibs for extra flavor.

  • Roll the mixture into small balls, about 1 inch in diameter.

  • Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

 

  • Store in an airtight container in the fridge for up to 1 week.
