Ingredients
For the Skewers:
9 oz cheese tortellini, cooked and cooled
1 cup cherry tomatoes
1 cup marinated mozzarella balls (bocconcini)
1/2 cup marinated artichoke hearts, chopped
1/2 cup sliced olives (black or green)
1/2 cup salami or pepperoni slices, folded
Fresh basil leaves
Wooden skewers or toothpicks
For the Lemon Basil Vinaigrette:
3 tablespoons olive oil
2 tablespoons lemon juice (fresh)
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 clove garlic, minced
2 tablespoons fresh basil, finely chopped
Salt and pepper, to taste

Cook Tortellini: Prepare tortellini according to package instructions. Drain and rinse under cold water. Set aside to cool.

Assemble Skewers: On each skewer, thread a combination of tortellini, tomato, mozzarella, artichoke, olive, salami, and a basil leaf. Repeat until all ingredients are used.

Make the Vinaigrette: In a small bowl or jar, whisk together olive oil, lemon juice, zest, Dijon mustard, garlic, and chopped basil. Season with salt and pepper to taste.

Dress the Skewers: Drizzle vinaigrette over the skewers just before serving or use as a dip on the side.
