Apple Walnut Cranberry Salad: A Healthy & Refreshing Recipe for All Occasions

For the Salad:
  • 2 apples, thinly sliced (Honeycrisp or Granny Smith work great)

  • ½ cup walnuts, toasted

  • ⅓ cup dried cranberries

  • 4 cups mixed greens (spinach, arugula, or romaine)

  • ½ cup feta cheese (or goat cheese), crumbled

  • ¼ small red onion, thinly sliced

For the Dressing:
  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • ½ tsp salt

  • ¼ tsp black pepper


Instructions

  • Toast the Walnuts:

    • Heat a dry skillet over medium heat.

    • Add walnuts and toast for 2-3 minutes, stirring often.

    • Remove from heat and let cool.

  • Prepare the Dressing:

    • In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.

  • Assemble the Salad:

    • In a large bowl, combine mixed greens, apples, cranberries, walnuts, red onion, and feta cheese.

 

  • Dress & Serve:

    • Drizzle the dressing over the salad and toss gently.

    • Serve immediately and enjoy!
