Ingredients
For the Salad:

2 apples, thinly sliced (Honeycrisp or Granny Smith work great)

½ cup walnuts, toasted

⅓ cup dried cranberries

4 cups mixed greens (spinach, arugula, or romaine)

½ cup feta cheese (or goat cheese), crumbled

¼ small red onion, thinly sliced
For the Dressing:

3 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp honey
-
1 tsp Dijon mustard

½ tsp salt

¼ tsp black pepper
Instructions

Toast the Walnuts:

Heat a dry skillet over medium heat.

Add walnuts and toast for 2-3 minutes, stirring often.

Remove from heat and let cool.

Prepare the Dressing:

In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
