Avocado Toast with Poached Eggs – The Ultimate Healthy Breakfast Recipe

2 slices of bread (sourdough or whole grain preferred)
1 ripe avocado
1 tablespoon lemon juice
Salt and black pepper, to taste
2 eggs
1 tablespoon white vinegar (for poaching)
Optional toppings: red pepper flakes, everything bagel seasoning, microgreens, or cherry tomatoes


Instructions

  • Toast the bread slices to your liking.

  • In a bowl, mash the avocado with lemon juice, salt, and pepper.

  • Spread the mashed avocado evenly over the toasted bread.

  • To poach the eggs: bring a saucepan of water to a gentle simmer and add vinegar. Crack each egg into a small bowl, then gently slide into the water. Poach for 3–4 minutes until whites are set.

  • Use a slotted spoon to remove the eggs and place one on each slice of toast.

 

  • Add any desired toppings and serve immediately.
