Bacon Mushroom Swiss Cheese Meatloaf – A Flavor-Packed Comfort Dish

1 ½ pounds ground beef (80/20)

½ pound ground pork

1 cup breadcrumbs

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, finely chopped

6 slices bacon, cooked and crumbled

1 cup shredded Swiss cheese

1 large egg

½ cup milk

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

½ teaspoon smoked paprika

For the Glaze:

¼ cup ketchup

1 tablespoon brown sugar

1 teaspoon Dijon mustard


Instructions

Prepare the Meatloaf Mixture: Preheat oven to 375°F (190°C). In a large bowl, mix ground beef, ground pork, breadcrumbs, onion, garlic, mushrooms, bacon, Swiss cheese, egg, milk, Worcestershire sauce, salt, pepper, thyme, and paprika until well combined.

 

Shape and Bake: Form the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet. In a small bowl, mix ketchup, brown sugar, and Dijon mustard, then spread it over the top of the meatloaf.

 

Bake: Bake for 50-60 minutes, until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.

 

Serve: Slice and serve warm with mashed potatoes or roasted vegetables.
