Baked Feta Chickpeas: A Comforting, Flavor-Packed Mediterranean Dish

  • 1 block (6–8 oz) feta cheese

  • 1 can (15 oz) chickpeas, drained & rinsed

  • 1 cup cherry tomatoes, halved

  • 2 garlic cloves, minced

  • 2 tbsp olive oil

  • ½ tsp dried oregano

  • Salt & pepper to taste

  • Fresh parsley or basil (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a baking dish, add chickpeas, tomatoes, garlic, olive oil, oregano, salt & pepper.

  3. Nestle the feta block in the center.

  4. Bake for 25–30 minutes until feta is soft and tomatoes are bursting.

  5. Stir everything together gently and top with fresh herbs.
