Ingredients
1 lb potato gnocchi
1 tablespoon olive oil
2 cloves garlic, minced
4 cups fresh spinach (about 5 oz)
1 cup marinara or tomato sauce
1/2 cup heavy cream
1/2 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil, for garnish (optional)
Instructions
-
Cook Gnocchi: Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil. Cook gnocchi according to package directions, usually 2–3 minutes or until they float. Drain and set aside.
-
Sauté Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant (about 30 seconds). Add the spinach and cook until wilted, about 2–3 minutes.
-
Combine Sauce: Stir in marinara sauce, heavy cream, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes.
-
Mix Gnocchi: Add cooked gnocchi to the sauce and toss to coat.
-
Assemble for Baking: Pour the gnocchi mixture into a greased 9×9-inch (or similar-sized) baking dish. Sprinkle with mozzarella and Parmesan cheese evenly over the top.
-
Bake: Bake uncovered for 20–25 minutes, or until bubbly and golden on top.
-
Garnish & Serve: Let it rest for 5 minutes before serving. Garnish with fresh basil if desired.
