Balsamic Chicken Bake with Fresh Tomatoes: A Flavorful & Easy Recipe

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • ¼ cup balsamic vinegar
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

 

  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a baking dish.

  2. Season the Chicken: In a small bowl, mix olive oil, minced garlic, oregano, salt, and black pepper. Rub this mixture over both sides of the chicken breasts.

  3. Arrange in Baking Dish: Place the chicken in the prepared baking dish. Scatter the cherry tomatoes around the chicken.

  4. Add Balsamic Glaze: Drizzle the balsamic vinegar evenly over the chicken and tomatoes. If using, sprinkle red pepper flakes for a slight kick.

  5. Bake: Place the dish in the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  6. Add Cheese: Remove from the oven and sprinkle mozzarella and Parmesan cheese over the chicken. Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

  7. Garnish and Serve: Sprinkle with fresh basil and serve warm with rice, pasta, or a side salad.
