Bananas Foster French Toast with Homemade Banana Bread – A Decadent Breakfast Treat

For the Homemade Banana Bread:

2 ripe bananas, mashed

½ cup unsalted butter, melted

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon cinnamon

¼ cup milk

For the French Toast Batter:

2 large eggs

½ cup whole milk

½ teaspoon cinnamon

½ teaspoon vanilla extract

1 tablespoon brown sugar

1 tablespoon butter (for cooking)

For the Bananas Foster Topping:

2 tablespoons unsalted butter

¼ cup brown sugar

¼ teaspoon cinnamon

2 bananas, sliced

2 tablespoons dark rum (optional)

1 teaspoon vanilla extract

¼ cup heavy cream

Pinch of salt

For Garnish:

Powdered sugar

Whipped cream

Chopped pecans (optional)


Instructions

Make the Banana Bread:

Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

In a large bowl, mix mashed bananas, melted butter, and sugar until smooth.

Add eggs and vanilla, stirring to combine.

In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

Gradually add dry ingredients to the wet ingredients, alternating with milk. Stir until just combined.

Pour batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

Let cool completely before slicing into thick pieces for French toast.

Prepare the French Toast Batter:

In a shallow dish, whisk together eggs, milk, cinnamon, vanilla, and brown sugar.

Heat 1 tablespoon butter in a skillet over medium heat.

Dip banana bread slices into the egg mixture, coating both sides, then cook for 2-3 minutes per side, until golden brown. Transfer to a plate and keep warm.

Make the Bananas Foster Topping:

In the same skillet, melt butter over medium heat. Stir in brown sugar and cinnamon, cooking until bubbly.

Add banana slices and cook for 1-2 minutes, until caramelized.

Pour in rum (if using) and carefully ignite with a long lighter to flambé. Let flames die down naturally.

Stir in vanilla extract, heavy cream, and a pinch of salt. Cook for another 1-2 minutes, until thickened.

Assemble and Serve:

Plate the banana bread French toast and drizzle with warm Bananas Foster sauce.

Garnish with powdered sugar, whipped cream, and chopped pecans (if desired).
