Ingredients
For the Beef:

1 lb beef sirloin or stew meat (cut into bite-sized pieces)

1 tbsp olive oil

1 tbsp butter

1 small onion (chopped)

2 garlic cloves (minced)

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

½ tsp dried thyme

1 cup beef broth

½ cup heavy cream or sour cream (for a creamy version)
For the Noodles:

12 oz egg noodles or pasta of choice

1 tbsp butter
-
¼ cup grated Parmesan cheese (optional)

2 tbsp chopped fresh parsley (for garnish)
Instructions

Cook the Beef:

Heat olive oil and butter in a large skillet over medium-high heat.

Add beef and sear until browned on all sides. Remove and set aside.

In the same pan, sauté onions until soft, then add garlic and cook for another 30 seconds.

Return the beef to the skillet, season with salt, pepper, paprika, and thyme.

Pour in beef broth, cover, and simmer for 20-25 minutes until the beef is tender.

Stir in heavy cream or sour cream for a creamy version and let it heat through.

Cook the Noodles:

While the beef simmers, cook the noodles according to package instructions. Drain and toss with butter and Parmesan cheese (if using).
