Buffalo Cauliflower Bites: Crispy, Spicy, and Healthy Snack Alternative

  • 1 medium head of cauliflower, cut into florets

  • 1 cup all-purpose flour

  • 1 cup water or plant-based milk

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 cup buffalo sauce

  • 2 tbsp unsalted butter, melted

  • Fresh parsley (optional, for garnish)


Instructions

  • Preheat the oven:

    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Prepare the cauliflower:

    • Wash and cut the cauliflower into bite-sized florets.

  • Make the batter:

    • In a large mixing bowl, whisk together flour, water (or milk), garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.

    • Add the cauliflower florets to the batter and toss until all pieces are evenly coated.

  • Bake the cauliflower:

    • Arrange the battered cauliflower florets on the prepared baking sheet in a single layer.

    • Bake for 20-25 minutes, flipping halfway through, until the cauliflower is crispy and golden.

  • Prepare the buffalo sauce:

    • While the cauliflower is baking, combine the buffalo sauce and melted butter in a small bowl and stir until well combined.

  • Coat the cauliflower:

    • Once the cauliflower is baked and crispy, remove it from the oven.

    • Place the cauliflower in a large bowl, pour the buffalo sauce mixture over the top, and toss to coat evenly.

 

  • Serve:

    • Serve the buffalo cauliflower bites immediately, garnished with fresh parsley if desired, and with a side of ranch or blue cheese dressing for dipping.
