Caesar Pasta Salad with Grilled Chicken: A Fresh, Flavorful Twist on a Classic Favorite

For the Salad:

  • 2 cups cooked pasta (penne, rotini, or bowtie)

  • 2 grilled chicken breasts (sliced)

  • 4 cups romaine lettuce (chopped)

  • ½ cup cherry tomatoes (halved)

  • ¼ cup red onion (thinly sliced)

  • ½ cup parmesan cheese (shredded)

  • ½ cup croutons

For the Caesar Dressing:

  • ½ cup mayonnaise

  • ¼ cup grated parmesan cheese

  • 2 tbsp lemon juice

  • 1 tbsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • 2 cloves garlic (minced)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp olive oil


Instructions

  • Cook the Pasta:

    • Boil pasta according to package instructions, then drain and rinse with cold water.

  • Grill the Chicken:

    • Season chicken with salt, pepper, and a drizzle of olive oil.

    • Grill over medium heat for 5-6 minutes per side until fully cooked.

    • Let rest, then slice into strips.

  • Prepare the Dressing:

    • In a bowl, whisk together mayonnaise, parmesan, lemon juice, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper.

    • Slowly whisk in olive oil until smooth.

  • Assemble the Salad:

    • In a large bowl, combine pasta, romaine, cherry tomatoes, red onion, and grilled chicken.

    • Drizzle with Caesar dressing and toss to coat.

    • Top with parmesan cheese and croutons.

 

  • Serve:

    • Enjoy immediately or chill before serving for a refreshing summer meal.
