Cajun Chicken Alfredo – Spicy Chicken Bites with Creamy Fettuccine

Ingredients

For the Cajun Chicken Bites:
1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 tablespoon Cajun seasoning (store-bought or homemade)
1/2 teaspoon garlic powder
Salt and pepper, to taste
Fresh parsley, for garnish (optional)

For the Fettuccine Alfredo:
12 oz fettuccine pasta
2 tablespoons butter
3 cloves garlic, minced
1 1/2 cups heavy cream
1 1/2 cups freshly grated Parmesan cheese
1/2 cup shredded mozzarella (optional, for extra cheesiness)
Salt and pepper, to taste
Pinch of nutmeg (optional)


Instructions

  • Cook the Pasta:

    • Bring a large pot of salted water to a boil.

    • Cook fettuccine according to package instructions until al dente. Drain and set aside.

  • Season and Cook the Chicken:

    • In a bowl, toss chicken pieces with Cajun seasoning, garlic powder, salt, and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Add the chicken in a single layer and sear for 2–3 minutes per side, until cooked through and lightly charred.

    • Remove from heat and set aside. Keep warm.

  • Make the Alfredo Sauce:

    • In a large skillet or saucepan, melt butter over medium heat.

    • Add minced garlic and sauté for about 1 minute until fragrant.

    • Pour in the heavy cream and bring to a gentle simmer.

    • Stir in Parmesan (and mozzarella, if using) until melted and smooth.

    • Season with salt, pepper, and a pinch of nutmeg if desired.

  • Combine and Serve:

    • Add cooked fettuccine to the Alfredo sauce and toss to coat evenly.

    • Plate the pasta and top with Cajun chicken bites.

    • Garnish with chopped parsley if desired.

 

  • Serve Hot:

    • Serve immediately with extra Parmesan on the side and crusty bread, if you like.
