Ingredients
• 1 lb shrimp, peeled and deveined
• 8 oz fettuccine or your favorite pasta
• 2 tbsp olive oil
• 1 tbsp Cajun seasoning
• 1 red bell pepper, sliced
• 1 green bell pepper, sliced
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1/2 cup chicken broth
• 1/2 cup Parmesan cheese, grated
• Salt and pepper to taste
• Fresh parsley for garnish
Instructions
1. Cook the pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.
2. Season the shrimp: Toss the shrimp with Cajun seasoning to coat evenly.
3. Cook the shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and fully cooked. Remove the shrimp from the skillet and set aside.
4. Cook the veggies: In the same skillet, add the remaining olive oil. Sauté the red and green bell peppers for 3-4 minutes until softened. Add the garlic and cook for another minute.
5. Make the sauce: Pour in the chicken broth and heavy cream, stirring to combine. Let it simmer for 2-3 minutes until it slightly thickens.
6. Combine everything: Add the Parmesan cheese to the sauce and stir until melted. Return the shrimp to the skillet and toss in the cooked pasta. Stir to coat everything in the creamy sauce.
7. Season and serve: Adjust salt and pepper to taste. Garnish with fresh parsley and serve hot.
