Caprese Pasta Salad with Sun-Dried Tomatoes: A Fresh, Flavorful Delight

  • 12 oz pasta (fusilli, penne, or bowtie)

  • 1 cup cherry tomatoes, halved

  • ½ cup sun-dried tomatoes, chopped

  • 8 oz fresh mozzarella balls (bocconcini), halved

  • ¼ cup fresh basil, chopped

  • ¼ cup pine nuts (optional)

  • ⅓ cup extra virgin olive oil

  • 2 tbsp balsamic vinegar

  • 1 clove garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp Italian seasoning


Instructions

  • Cook the pasta

    • Boil pasta in salted water according to package instructions until al dente. Drain and rinse under cold water.

  • Prepare the dressing

    • In a small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, pepper, and Italian seasoning.

  • Assemble the salad

    • In a large bowl, combine pasta, cherry tomatoes, sun-dried tomatoes, mozzarella balls, basil, and pine nuts.

  • Toss everything together

    • Pour the dressing over the salad and toss gently to combine.

 

  • Chill and serve

    • Let the salad sit for 10-15 minutes to absorb flavors, then serve fresh!
