Ingredients
-
10 cups popped plain popcorn (about 1/2 cup unpopped kernels)
-
1 cup packed brown sugar
-
1/4 cup light corn syrup
-
1/2 cup unsalted butter
-
1/2 tsp salt
-
1/4 tsp baking soda
-
1/2 tsp vanilla extract
-
Optional: dried cranberries or pretzel pieces for added decoration
Instructions
1. Pop the Popcorn:
-
Pop your kernels using an air popper or stovetop (avoid buttered microwave popcorn).
-
Measure out 10 cups and spread on parchment paper or in a large bowl. Remove unpopped kernels.
2. Make the Caramel:
-
In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt.
-
Stir continuously until the mixture begins to boil.
-
Let boil without stirring for 4–5 minutes.
-
Remove from heat and quickly stir in baking soda and vanilla — it will foam up slightly.
3. Coat the Popcorn:
-
Immediately pour the caramel over the popcorn and stir to coat evenly.
-
Spread on parchment-lined trays to cool.
-
Let sit for 20–30 minutes, until cool and firm.
4. Thread the Garland:
-
Once the caramel popcorn is firm but not too brittle, use a needle and thread to string pieces together.
-
Be gentle to avoid breaking the popcorn. Alternate with dried cranberries or small pretzels for a decorative touch.
