Caramelized Onion Baked Brie Recipe: A Gooey, Golden Crowd-Pleaser

  • 1 (8 oz) wheel of Brie cheese (rind on)

  • 2 medium yellow onions, thinly sliced

  • 1 tablespoon olive oil or butter

  • 1/2 teaspoon salt

  • 1/2 teaspoon sugar (optional, to speed up caramelizing)

  • 1/2 teaspoon balsamic vinegar (optional, for depth)

  • 1 sheet puff pastry (optional, for wrapping)

  • 1 egg, beaten (for egg wash, optional if using pastry)

  • Crackers, crostini, or sliced apples/pears, for serving


Instructions

Caramelize the onions:

  • Heat olive oil or butter in a skillet over medium-low heat.

  • Add onions and salt. Cook slowly, stirring occasionally, for 20–25 minutes, until golden brown and soft.

  • Optional: Add sugar after 10 minutes for quicker caramelization, and a splash of balsamic at the end for extra flavor. Set aside to cool slightly.

2. (Optional) Wrap the Brie:

  • If using puff pastry, roll it out slightly and place Brie in the center.

  • Top with caramelized onions.

  • Fold pastry over Brie, sealing the edges. Flip it seam-side down.

  • Brush with beaten egg for golden color.

3. Bake:

  • Preheat oven to 375°F (190°C).

  • Place the Brie (wrapped or unwrapped) on parchment-lined baking sheet.

  • Bake for 15–20 minutes (without pastry) or 25–30 minutes (with pastry) until the cheese is melty inside and golden outside.

4. Serve:

 

  • Let sit for 5 minutes before serving.

  • Transfer to a serving platter with your favorite crackers, sliced baguette, or fruit.
