1 (8 oz) wheel of Brie cheese (rind on)

2 medium yellow onions, thinly sliced

1 tablespoon olive oil or butter

1/2 teaspoon salt

1/2 teaspoon sugar (optional, to speed up caramelizing)

1/2 teaspoon balsamic vinegar (optional, for depth)

1 sheet puff pastry (optional, for wrapping)

1 egg, beaten (for egg wash, optional if using pastry)

Crackers, crostini, or sliced apples/pears, for serving
Instructions
Caramelize the onions:

Heat olive oil or butter in a skillet over medium-low heat.

Add onions and salt. Cook slowly, stirring occasionally, for 20–25 minutes, until golden brown and soft.

Optional: Add sugar after 10 minutes for quicker caramelization, and a splash of balsamic at the end for extra flavor. Set aside to cool slightly.
2. (Optional) Wrap the Brie:

If using puff pastry, roll it out slightly and place Brie in the center.

Top with caramelized onions.

Fold pastry over Brie, sealing the edges. Flip it seam-side down.

Brush with beaten egg for golden color.
3. Bake:

Preheat oven to 375°F (190°C).

Place the Brie (wrapped or unwrapped) on parchment-lined baking sheet.

Bake for 15–20 minutes (without pastry) or 25–30 minutes (with pastry) until the cheese is melty inside and golden outside.
4. Serve:

Let sit for 5 minutes before serving.

Transfer to a serving platter with your favorite crackers, sliced baguette, or fruit.
