Cheesy Broccoli Fritters: Crispy & Cheesy Veggie Delight

  • 2 cups finely chopped broccoli florets (steamed or blanched)

  • ½ cup shredded cheddar cheese

  • ¼ cup grated Parmesan cheese

  • ¼ cup all-purpose flour

  • 2 large eggs

  • ¼ cup chopped green onions (optional)

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • Olive oil or neutral oil, for frying


Instructions

  • Prepare the Broccoli:

    • Steam or blanch broccoli until just tender, then finely chop.

    • Let it cool slightly and pat dry to remove excess moisture.

  • Mix the Batter:

    • In a large bowl, combine broccoli, cheddar, Parmesan, flour, eggs, green onions (if using), garlic powder, salt, and pepper.

    • Mix until everything is evenly incorporated.

  • Form the Fritters:

    • Scoop about 2 tablespoons of the mixture and shape into small patties.

  • Cook the Fritters:

    • Heat 1-2 tablespoons oil in a skillet over medium heat.

    • Fry fritters for 3-4 minutes per side, until golden brown and crispy.

    • Transfer to a paper towel-lined plate to drain.

 

  • Serve & Enjoy:

    • Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.
