Ingredients

3 cups cooked rice

3 cups fresh broccoli florets (lightly steamed)

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 cup sour cream

2 cups shredded cheddar cheese (divided)

1/2 cup milk

1/2 tsp garlic powder

1/2 tsp onion powder

Salt & pepper, to taste

1/2 cup crushed Ritz crackers (or breadcrumbs)

2 tbsp melted butter
Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

In a large bowl, mix together cooked rice, broccoli, cream soup, sour cream, 1 1/2 cups cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.

Spread mixture evenly into the prepared baking dish.

Top with remaining 1/2 cup cheddar cheese.

In a small bowl, combine crushed Ritz crackers with melted butter. Sprinkle over casserole.

Bake for 25–30 minutes, until bubbly and golden brown on top.
