Cheesy Broccoli Rice Casserole

  • 3 cups cooked rice

  • 3 cups fresh broccoli florets (lightly steamed)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese (divided)

  • 1/2 cup milk

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper, to taste

  • 1/2 cup crushed Ritz crackers (or breadcrumbs)

  • 2 tbsp melted butter


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. In a large bowl, mix together cooked rice, broccoli, cream soup, sour cream, 1 1/2 cups cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.

  3. Spread mixture evenly into the prepared baking dish.

  4. Top with remaining 1/2 cup cheddar cheese.

  5. In a small bowl, combine crushed Ritz crackers with melted butter. Sprinkle over casserole.

  6. Bake for 25–30 minutes, until bubbly and golden brown on top.

  7. Serve warm and enjoy that cheesy comfort!
