Cheesy One-Pot Beef & Potatoes: Easy, Comforting, and Delicious Dinner Recipe

Ingredients

1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
4 cups diced potatoes (peeled if preferred)
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
1 cup beef broth
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
Olive oil, as needed


Instructions

  • Cook the Beef:

    • In a large deep skillet or pot, heat a bit of olive oil over medium heat.

    • Add ground beef and cook until browned, breaking it up with a spoon.

    • Drain excess grease and set the beef aside.

  • Sauté Veggies:

    • In the same skillet, add a little more oil if needed.

    • Sauté onion and garlic until fragrant, about 2–3 minutes.

  • Cook Potatoes:

    • Add diced potatoes, paprika, thyme, salt, and pepper.

    • Stir to coat, then pour in the beef broth.

    • Cover and simmer for 10–15 minutes, or until potatoes are fork-tender.

  • Combine & Melt Cheese:

    • Return the cooked beef to the pan. Stir to combine.

    • Sprinkle cheddar and mozzarella over the mixture.

    • Cover again and cook for 2–3 minutes, until cheese is melted and gooey.

 

  • Serve:

    • Garnish with fresh parsley if desired. Serve hot and enjoy!
