Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
4 cups diced potatoes (peeled if preferred)
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
1 cup beef broth
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
Olive oil, as needed
Instructions

Cook the Beef:

In a large deep skillet or pot, heat a bit of olive oil over medium heat.

Add ground beef and cook until browned, breaking it up with a spoon.

Drain excess grease and set the beef aside.

Sauté Veggies:

In the same skillet, add a little more oil if needed.

Sauté onion and garlic until fragrant, about 2–3 minutes.

Cook Potatoes:

Add diced potatoes, paprika, thyme, salt, and pepper.

Stir to coat, then pour in the beef broth.

Cover and simmer for 10–15 minutes, or until potatoes are fork-tender.

Combine & Melt Cheese:

Return the cooked beef to the pan. Stir to combine.

Sprinkle cheddar and mozzarella over the mixture.

Cover again and cook for 2–3 minutes, until cheese is melted and gooey.

Serve:

Garnish with fresh parsley if desired. Serve hot and enjoy!
