Ingredients
3 packs ramen noodles (discard seasoning packets)
1 lb ground beef or Italian sausage
1 jar (24 oz) marinara or pasta sauce
1 cup ricotta or cottage cheese
1 egg
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Chopped parsley, for garnish
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook ramen noodles in boiling water for 2–3 minutes until just softened. Drain and set aside.

In a skillet, cook ground meat over medium heat until browned. Drain excess fat and stir in marinara sauce.

In a small bowl, mix ricotta or cottage cheese with the egg and Italian seasoning.

Layer the casserole: start with a bit of meat sauce on the bottom, then a layer of noodles, followed by the ricotta mixture, mozzarella, and more sauce. Repeat layers, ending with sauce and a generous topping of mozzarella and Parmesan.

Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.

Let rest for 5–10 minutes before serving. Garnish with chopped parsley.
