Cheesy Ramen Lasagna Casserole – Easy Comfort Food Twist for Dinner

3 packs ramen noodles (discard seasoning packets)
1 lb ground beef or Italian sausage
1 jar (24 oz) marinara or pasta sauce
1 cup ricotta or cottage cheese
1 egg
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Chopped parsley, for garnish


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  • Cook ramen noodles in boiling water for 2–3 minutes until just softened. Drain and set aside.

  • In a skillet, cook ground meat over medium heat until browned. Drain excess fat and stir in marinara sauce.

  • In a small bowl, mix ricotta or cottage cheese with the egg and Italian seasoning.

  • Layer the casserole: start with a bit of meat sauce on the bottom, then a layer of noodles, followed by the ricotta mixture, mozzarella, and more sauce. Repeat layers, ending with sauce and a generous topping of mozzarella and Parmesan.

  • Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.

 

  • Let rest for 5–10 minutes before serving. Garnish with chopped parsley.
