Ingredients

1 lb smoked sausage, sliced into rounds

2 lbs potatoes, diced into small cubes

1 packet ranch seasoning mix

2 tbsp olive oil

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese

1/4 cup cooked bacon bits (optional)

2 green onions, sliced (for garnish)

Salt & pepper, to taste
Instructions

Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.

In a bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper.

Spread potatoes evenly in the baking dish and bake for 25 minutes, stirring halfway through.

Add sliced smoked sausage on top of the potatoes. Continue baking for 15–20 minutes until potatoes are tender and sausage is browned.

Sprinkle cheddar, mozzarella, and bacon bits (if using) over the top. Return to the oven for 5 minutes until cheese is melted and bubbly.

Garnish with sliced green onions.
