Chicken Sausages with Zucchini, Tomatoes, and Pasta Recipe

  • 12 oz pasta (penne or rigatoni works best)

  • 1 lb chicken sausages, sliced into rounds

  • 2 tbsp olive oil

  • 1 medium zucchini, sliced

  • 1 cup cherry tomatoes, halved

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1/2 tsp red pepper flakes (optional)

  • Salt & pepper, to taste

  • Fresh basil or parsley, chopped (for garnish)


Instructions

  • Cook pasta according to package directions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add chicken sausage slices and cook until golden brown. Remove and set aside.

  • In the same skillet, sauté onion and garlic until fragrant.

  • Add zucchini and cherry tomatoes, cooking until just tender.

  • Stir in chicken broth, heavy cream, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until sauce thickens slightly.

  • Return sausage to the skillet, then add cooked pasta. Toss everything together until well coated.

  • Garnish with fresh basil or parsley and extra Parmesan.

 

  • Serve hot and enjoy a hearty, flavorful pasta dish!
