Ingredients

12 oz pasta (penne or rigatoni works best)

1 lb chicken sausages, sliced into rounds

2 tbsp olive oil

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

1 small onion, chopped

3 cloves garlic, minced

1/2 cup chicken broth
-
1/2 cup heavy cream
-
1/4 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt & pepper, to taste

Fresh basil or parsley, chopped (for garnish)
Instructions

Cook pasta according to package directions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add chicken sausage slices and cook until golden brown. Remove and set aside.

In the same skillet, sauté onion and garlic until fragrant.

Add zucchini and cherry tomatoes, cooking until just tender.

Stir in chicken broth, heavy cream, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until sauce thickens slightly.

Return sausage to the skillet, then add cooked pasta. Toss everything together until well coated.

Garnish with fresh basil or parsley and extra Parmesan.
