  • 2 cups cooked chicken, shredded
  • ½ cup dried cranberries
  • ½ cup pecans, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup mayonnaise or Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 large tortillas or wraps

 

  • 1 cup baby spinach or mixed greens

Instructions

  1. Prepare the filling – In a large bowl, combine shredded chicken, dried cranberries, chopped pecans, and crumbled feta cheese.
  2. Make the dressing – In a small bowl, whisk together mayonnaise (or Greek yogurt), honey, Dijon mustard, salt, and black pepper.
  3. Mix everything – Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Assemble the wraps – Lay out the tortillas, add a handful of baby spinach or mixed greens, and spoon the chicken mixture onto each tortilla.
  5. Roll and serve – Fold in the sides and roll the wrap tightly. Slice in half and serve immediately or wrap in foil for later.
