Chocolate Chip Banana Bread Muffins Recipe: Soft & Delicious

  • 3 ripe bananas, mashed

  • ½ cup unsalted butter, melted

  • ¾ cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon (optional)

  • ¾ cup chocolate chips (plus extra for topping)


Instructions

  • Preheat the Oven:

    • Preheat oven to 350°F (175°C).

    • Line a muffin tin with paper liners or lightly grease it.

  • Mix the Wet Ingredients:

    • In a large bowl, whisk together mashed bananas, melted butter, and brown sugar until smooth.

    • Add eggs and vanilla extract, mixing well.

  • Combine Dry Ingredients:

    • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

  • Make the Batter:

    • Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.

    • Fold in chocolate chips.

  • Fill & Bake:

    • Divide the batter evenly among the muffin cups, filling about ¾ full.

    • Sprinkle extra chocolate chips on top.

    • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

 

  • Cool & Serve:

    • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

    • Enjoy warm or store in an airtight container.
