For the Cookies:

For the Cheesecake Filling:

Instructions
Make Cookies:
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, and salt.
In a large bowl, beat butter, granulated sugar, brown sugar, and vanilla until creamy. Add eggs one at a time, beating well after each. Gradually mix in flour mixture. Stir in chocolate chips.
Drop rounded tablespoons of dough onto prepared baking sheets. Bake 9-11 minutes or until golden brown. Cool on wire racks.
Prepare Cheesecake Filling:
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold whipped cream into cream cheese mixture until combined.
Assemble Sandwiches:
Spread a generous amount of cheesecake filling onto the flat side of one cookie. Top with another cookie, pressing gently to spread filling evenly.
Repeat with remaining cookies and filling.
Serve:
Chill sandwiches for at least 30 minutes before serving for best texture. Enjoy!
