For the Brownies:

  • 1 cup unsalted butter, melted

  • 1 ยฝ cups granulated sugar

  • 1 cup brown sugar

  • 4 large eggs

  • 1 tablespoon vanilla extract

  • 1 cup all-purpose flour

  • ยพ cup unsweetened cocoa powder

  • ยฝ teaspoon salt

  • ยฝ teaspoon baking powder

For the Strawberry Layer:

  • 2 cups fresh strawberries, hulled and sliced

  • 2 tablespoons sugar

  • 1 teaspoon lemon juice

For the Chocolate Coating:

  • 1 ยฝ cups semi-sweet chocolate chips

  • 1 tablespoon coconut oil or butter


Instructions

  • Make the Brownies:

    • Preheat oven to 350ยฐF (175ยฐC). Line a 9ร—13-inch baking pan with parchment paper.

    • In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.

    • Add eggs and vanilla extract, whisking until fully combined.

    • In another bowl, mix flour, cocoa powder, salt, and baking powder.

    • Gradually add dry ingredients to the wet ingredients, stirring until just combined.

    • Pour batter into the prepared pan and spread evenly.

    • Bake for 25โ€“30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.

  • Prepare the Strawberry Layer:

    • In a bowl, toss sliced strawberries with sugar and lemon juice. Let sit for 10 minutes to release juices.

    • Spread strawberries evenly over the cooled brownies.

  • Make the Chocolate Coating:

    • In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

    • Pour melted chocolate over the strawberry layer, spreading it evenly.

    • Refrigerate for at least 30 minutes until the chocolate sets.
