Chopped Greek Salad with Feta and Olives: Fresh & Flavorful Mediterranean Delight

Ingredients

  • 1 large cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, finely chopped

  • 1 green bell pepper, chopped

  • ½ cup Kalamata olives, sliced

  • ½ cup feta cheese, crumbled

  • ¼ cup fresh parsley, chopped

For the Dressing:
  • ¼ cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon dried oregano

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Juice of ½ lemon


Instructions

  • Prepare the Vegetables:

    • Dice the cucumber, tomatoes, bell pepper, and onion into bite-sized pieces.

    • Slice the olives and chop the parsley.

  • Make the Dressing:

    • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, garlic powder, salt, and pepper.

  • Assemble the Salad:

    • In a large bowl, combine the chopped veggies, olives, and crumbled feta cheese.

    • Drizzle with the dressing and toss gently to coat everything evenly.

 

  • Serve & Enjoy:

    • Garnish with extra feta and parsley. Serve immediately or let it marinate for 15 minutes for deeper flavors!
