Ingredients
For the churros:
1 cup water
2 1/2 tablespoons sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
Oil, for frying
1/2 cup sugar + 1 teaspoon ground cinnamon (for coating)
For the chocolate sauce:
1/2 cup heavy cream
4 oz semisweet chocolate, chopped
1 tablespoon butter
1/2 teaspoon vanilla extract

Make the dough: In a saucepan, combine water, sugar, salt, and oil. Bring to a boil, remove from heat, and stir in flour until a dough forms.

Heat oil: Heat oil in a deep pan to 375°F (190°C).

Fry the churros: Transfer dough to a piping bag with a star tip. Pipe strips into the hot oil and fry until golden brown. Drain on paper towels.

Coat: Toss warm churros in the cinnamon-sugar mixture.

Make the sauce: Heat cream in a small saucepan until simmering. Remove from heat and stir in chocolate, butter, and vanilla until smooth.
