2 cups old-fashioned rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup ground flaxseed (optional, for extra fiber)
1/2 cup unsweetened applesauce
1/3 cup honey or maple syrup
1/4 cup nut butter (like almond or peanut)
1 large egg
1 teaspoon vanilla extract
1 cup finely chopped apple (peeled if desired)
1/4 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat Oven:

    • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

  2. Mix Dry Ingredients:

    • In a large bowl, stir together oats, cinnamon, baking powder, salt, and flaxseed if using.

  3. Combine Wet Ingredients:

    • In another bowl, whisk together applesauce, honey, nut butter, egg, and vanilla extract.

  4. Combine and Fold:

    • Pour the wet mixture into the dry ingredients and stir until just combined.

    • Fold in chopped apples and nuts.

  5. Bake:

    • Spread the mixture evenly in the prepared baking pan.

    • Bake for 25–30 minutes, or until edges are golden and the center is set.

  6. Cool and Slice:

    • Let cool completely in the pan before slicing into bars. Store in an airtight container in the fridge for up to 5 days.
