Ingredients
• 1 lb beef sirloin, thinly sliced
• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 cup mushrooms, sliced
• 1 cup beef broth
• 1 cup sour cream
• 1 tbsp Dijon mustard
• Salt and pepper to taste
• 2 tbsp all-purpose flour
• 1/4 cup water
• Egg noodles, cooked (for serving)
• Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the sliced beef and cook until browned on all sides, about 4-5 minutes. Remove the beef from the pan and set aside.
2. In the same skillet, add diced onions and sauté until softened, about 3 minutes. Add the garlic and cook for another minute.
3. Add the sliced mushrooms to the skillet and cook until they release their juices and soften, about 5 minutes.
4. Stir in the beef broth and Dijon mustard. Season with salt and pepper.
5. In a small bowl, whisk together the flour and water until smooth. Add this mixture to the skillet and stir well to thicken the sauce.
6. Reduce heat to low and stir in the sour cream. Simmer gently for a few minutes, but do not boil.
7. Return the beef to the skillet and mix everything together. Let it heat through for a couple of minutes.
8. Serve over egg noodles and garnish with fresh parsley.
