2 pounds ground beef (80/20 blend for best flavor)

1 small onion, finely diced

2 cloves garlic, minced

1 cup breadcrumbs (plain or Italian-style)

½ cup whole milk

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

½ teaspoon smoked paprika

For the Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon Dijon mustard

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cut into chunks

4 tablespoons unsalted butter

½ cup whole milk (or heavy cream)

½ teaspoon salt

¼ teaspoon black pepper

¼ cup sour cream (optional, for extra creaminess)


Instructions

Prepare the Meatloaf:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

In a large bowl, combine ground beef, diced onion, garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and smoked paprika.

Mix gently until all ingredients are evenly distributed, being careful not to overmix (this keeps the meatloaf tender).

Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.

Make the Glaze:

In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard.

Spread half of the glaze evenly over the meatloaf.

Bake the Meatloaf:

Bake for 45 minutes, then spread the remaining glaze over the top.

Continue baking for another 15 minutes, or until the internal temperature reaches 160°F (71°C).

Let the meatloaf rest for 10 minutes before slicing.

Prepare the Mashed Potatoes:

While the meatloaf is baking, place potatoes in a large pot and cover with cold water. Add a pinch of salt.

Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are fork-tender.

Drain and return potatoes to the pot. Add butter, milk, salt, black pepper, and sour cream (if using).

Mash until smooth and creamy, adding more milk if needed for desired consistency.
