Instructions

Preheat the Oven:

Grate the zucchinis using a coarse grater.

Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

In a large mixing bowl, whisk the eggs.

Add the flour, cheese, onion, bacon (or ham), olive oil (or melted butter), dried oregano, salt, and pepper.

Stir everything together until well combined.

Add the grated zucchini and mix again, ensuring everything is evenly distributed.
