Ingredients

12 oz linguine pasta

1 1/2 lbs chicken breast, cut into bite-sized pieces

1/2 cup unsalted butter, melted

4 cloves garlic, minced

Juice & zest of 1 lemon

1 tsp Dijon mustard

1/2 tsp red pepper flakes (adjust to spice level)

1 tsp smoked paprika
-
1 tsp Italian seasoning
-
2 tbsp fresh parsley, chopped

1 tbsp fresh chives, chopped

Salt & pepper, to taste

1/2 cup grated Parmesan cheese
Instructions

Cook linguine according to package directions, drain, and set aside.

In a large skillet, cook chicken pieces with a little oil, salt, and pepper until golden and cooked through. Remove and set aside.

In the same skillet, melt butter and add garlic, lemon juice & zest, Dijon, paprika, red pepper flakes, and Italian seasoning. Simmer 1–2 minutes until fragrant.

Return chicken to skillet, toss to coat in cowboy butter sauce.

Add linguine, Parmesan, parsley, and chives. Toss well until pasta is coated and creamy.

Serve hot with extra Parmesan and a sprinkle of red pepper flakes if desired.
