Cowboy Butter Chicken Linguine Recipe

  • 12 oz linguine pasta

  • 1 1/2 lbs chicken breast, cut into bite-sized pieces

  • 1/2 cup unsalted butter, melted

  • 4 cloves garlic, minced

  • Juice & zest of 1 lemon

  • 1 tsp Dijon mustard

  • 1/2 tsp red pepper flakes (adjust to spice level)

  • 1 tsp smoked paprika

  • 1 tsp Italian seasoning

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh chives, chopped

  • Salt & pepper, to taste

  • 1/2 cup grated Parmesan cheese


Instructions

  • Cook linguine according to package directions, drain, and set aside.

  • In a large skillet, cook chicken pieces with a little oil, salt, and pepper until golden and cooked through. Remove and set aside.

  • In the same skillet, melt butter and add garlic, lemon juice & zest, Dijon, paprika, red pepper flakes, and Italian seasoning. Simmer 1–2 minutes until fragrant.

  • Return chicken to skillet, toss to coat in cowboy butter sauce.

  • Add linguine, Parmesan, parsley, and chives. Toss well until pasta is coated and creamy.

 

  • Serve hot with extra Parmesan and a sprinkle of red pepper flakes if desired.
