Ingredients
4 boneless, skinless chicken breasts
1 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled (about 6 slices)
1/2 cup ranch dressing
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1 cup Doritos, crushed (preferably Cool Ranch or Classic)
1 tablespoon olive oil
Salt and pepper, to taste
Instructions
-
Prepare the Chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, create a pocket in each chicken breast by slicing horizontally through the thickest part of the breast, being careful not to cut all the way through.
-
Make the Filling: In a medium bowl, combine the cream cheese, shredded cheddar cheese, crumbled bacon, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
-
Stuff the Chicken: Carefully spoon the cream cheese mixture into each chicken pocket, ensuring they are well filled. Secure the openings with toothpicks if necessary to keep the filling inside during baking.
-
Coat the Chicken: Crush the Doritos in a zip-top bag using a rolling pin until they form small crumbs. Pour the crushed Doritos onto a plate. Dip each stuffed chicken breast into the crushed Doritos, coating it thoroughly.
-
Bake the Chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts and sear for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).
-
Serve: Remove the toothpicks from the chicken before serving. Serve the chicken hot, and enjoy the creamy, cheesy, bacon-filled goodness with the crispy Dorito crust!
