Ingredients
1 cup long-grain white rice (or jasmine rice)
2 cups water
1 ripe avocado, mashed
2 tablespoons fresh lime juice
1 teaspoon lime zest
1–2 tablespoons chopped fresh cilantro
1 tablespoon olive oil (optional)
Salt to taste
Instructions

In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 15–18 minutes until water is absorbed and rice is tender. Let it sit covered for 5 minutes, then fluff with a fork.

In a mixing bowl, combine the cooked rice with mashed avocado, lime juice, lime zest, cilantro, and olive oil (if using).

Mix until creamy and well combined. Season with salt to taste.
