- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 package (150g) Boursin cheese (Garlic & Herbs flavor)
- ½ cup heavy cream
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried thyme (optional)
- 1 cup baby spinach (optional)
- Fresh parsley, for garnish
Instructions
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same pan, melt butter and sauté the garlic for 30 seconds until fragrant.
- Pour in the chicken broth and scrape the bottom of the pan to deglaze.
- Add the Boursin cheese and heavy cream, stirring until smooth.
- Return the chicken to the skillet, cover, and simmer on low for 10-12 minutes, until fully cooked.
- If using spinach, stir it in during the last 2 minutes of cooking.
- Garnish with fresh parsley and serve with mashed potatoes, rice, or pasta.
