Ingredients
• 1 lb gnocchi
• 1 lb ground turkey sausage (or chicken sausage)
• 2 cups butternut squash, cubed
• 1/2 cup heavy cream
• 1/4 cup grated Parmesan cheese
• 2 tbsp olive oil
• 1 small onion, chopped
• 2 cloves garlic, minced
• 1/2 tsp dried sage
• Salt and pepper to taste
Instructions
1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey sausage and cook until browned, breaking it apart as it cooks. Remove from the skillet and set aside.
2. In the same skillet, add another tablespoon of olive oil. Sauté the chopped onion until soft and translucent, about 5 minutes. Add the minced garlic and cook for 1 more minute.
3. Add the cubed butternut squash and sage to the skillet. Season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the squash is tender.
4. Stir in the heavy cream and grated Parmesan cheese, letting it simmer for 2-3 minutes until the sauce thickens slightly.
5. Meanwhile, cook the gnocchi according to package instructions. Drain and add the cooked gnocchi to the skillet with the butternut squash sauce.
6. Return the cooked turkey sausage to the skillet and stir everything together until well combined.
7. Serve warm, garnished with extra Parmesan if desired.
