Ingredients

12 oz penne pasta (or your favorite pasta)

1 lb chicken breast, cut into strips

2 tbsp Cajun seasoning (divided)

2 tbsp olive oil (or butter)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small onion, thinly sliced

3 cloves garlic, minced

1 cup heavy cream
-
1/2 cup chicken broth
-
1/2 cup Parmesan cheese, grated

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional, for extra heat)

Salt & black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Cook pasta according to package directions. Drain and set aside.

Season chicken with 1 tbsp Cajun seasoning.

In a large skillet, heat olive oil over medium-high heat. Cook chicken until golden and fully cooked. Remove and set aside.

In the same skillet, sauté peppers, onion, and garlic until softened.

Stir in heavy cream, chicken broth, Parmesan, smoked paprika, cayenne, and remaining Cajun seasoning. Simmer 3–4 minutes until slightly thickened.

Add cooked pasta and chicken back into the skillet. Toss until coated in the creamy Cajun sauce.

Garnish with parsley and extra Parmesan if desired.
