Ingredients
1 lb chicken breast, cut into bite-sized pieces
1 package (16 oz) gnocchi
2 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
2 cups fresh spinach
1 cup heavy cream
1 ½ cups chicken broth
1 tsp Italian seasoning
½ cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Heat olive oil in a large pan over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
In the same pan, add the chopped onion and garlic. Sauté until softened, about 3 minutes.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring it to a simmer.
Add the gnocchi to the pan and cook for 3-5 minutes until tender.
Stir in the heavy cream and Italian seasoning. Let it simmer for another 2 minutes.
Return the cooked chicken to the pan, followed by the spinach. Cook until the spinach wilts, about 2 minutes.
Sprinkle the Parmesan cheese on top, stirring to combine. Season with salt and pepper to taste.
