Creamy Garlic Shrimp Over Mashed Potatoes

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled & cubed

  • 4 tbsp butter

  • 1/2 cup milk (warm)

  • 1/4 cup sour cream (optional)

  • Salt & pepper, to taste

For the Creamy Garlic Shrimp:

  • 1 lb large shrimp, peeled & deveined

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup Parmesan cheese, grated

  • 1 tsp paprika

  • 1/2 tsp red pepper flakes (optional)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Boil potatoes in salted water until tender. Drain and mash with butter, milk, sour cream, salt, and pepper until smooth and creamy. Keep warm.

  • In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant.

  • Add shrimp, season with paprika, salt, and pepper. Cook 2–3 minutes per side until pink. Remove shrimp and set aside.

  • In the same pan, pour in chicken broth and heavy cream. Stir and simmer until sauce thickens slightly. Add Parmesan and mix well.

  • Return shrimp to the skillet, tossing to coat in creamy garlic sauce.

  • Serve shrimp and sauce generously over mashed potatoes.

  • Garnish with parsley and a sprinkle of Parmesan.
