Ingredients
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups frozen or fresh peas
3 cups vegetable broth
1/4 cup fresh mint leaves
1/2 cup heavy cream or coconut milk (optional for creaminess)
Salt and black pepper, to taste
Lemon juice, to finish
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened, about 4–5 minutes.

Add peas and vegetable broth. Bring to a simmer and cook for 8–10 minutes, until peas are tender.

Stir in mint leaves, then remove from heat.

Use an immersion blender or regular blender to puree the soup until smooth.

Return to pot, stir in cream or coconut milk (if using), and season with salt, pepper, and a splash of lemon juice.

Heat through gently and serve warm.
