Creamy Pea and Mint Soup – Fresh, Healthy, and Perfect for Spring

Ingredients

1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups frozen or fresh peas
3 cups vegetable broth
1/4 cup fresh mint leaves
1/2 cup heavy cream or coconut milk (optional for creaminess)
Salt and black pepper, to taste
Lemon juice, to finish


Instructions

  • In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened, about 4–5 minutes.

  • Add peas and vegetable broth. Bring to a simmer and cook for 8–10 minutes, until peas are tender.

  • Stir in mint leaves, then remove from heat.

  • Use an immersion blender or regular blender to puree the soup until smooth.

  • Return to pot, stir in cream or coconut milk (if using), and season with salt, pepper, and a splash of lemon juice.

 

  • Heat through gently and serve warm.
