  • Author: Hannah

Ingredients

Scale
  • 1 pound (450g) potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • ½ cup heavy cream
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ½ cup grated Parmesan cheese
  • 1 ball burrata cheese

  • Fresh basil leaves, for garnish

Instructions

  1. Cook the Gnocchi: Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions. Drain and set aside.

  2. Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 30 seconds, until fragrant.

  3. Simmer the Tomatoes: Pour in the crushed tomatoes, dried oregano, red pepper flakes (if using), salt, and black pepper. Simmer for 5 minutes, stirring occasionally.

  4. Make it Creamy: Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Let it cook for 2 more minutes, allowing the flavors to combine.

  5. Combine with Gnocchi: Add the cooked gnocchi to the skillet and toss to coat in the sauce. Cook for 2 minutes, until heated through.

  6. Add the Burrata: Tear the burrata cheese into pieces and place them over the gnocchi. Let it slightly melt into the sauce.

  7. Serve: Garnish with fresh basil and an extra sprinkle of Parmesan. Serve immediately and enjoy!
