For the Salmon Bites:

450g (1 lb) salmon, skin removed, cut into 1-inch cubes

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika

½ cup all-purpose flour

1 large egg, beaten

1 cup panko breadcrumbs

Oil for frying (vegetable or avocado oil)

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey or maple syrup

Prepare the Salmon Bites

Pat the salmon cubes dry and season with salt, black pepper, garlic powder, and paprika.

Dredge each piece in flour, dip into the beaten egg, and coat with panko breadcrumbs.

Fry the Salmon

Heat oil in a pan over medium-high heat (about 175°C/350°F).

Fry the salmon bites in batches for 2–3 minutes per side until golden brown and crispy.

Remove and drain on paper towels.

Make the Bang Bang Sauce

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.

Serve

Drizzle the Bang Bang sauce over the crispy salmon bites or serve on the side for dipping.
