- ½ tsp red pepper flakes (optional)

- 1 slice sourdough or pita bread (for serving)
Instructions

Heat the Pan:
- Heat olive oil in a nonstick or cast-iron skillet over medium heat.
- Sprinkle crumbled feta evenly over the pan.

Cook the Feta & Eggs:
- Let the feta sizzle for 30-60 seconds until it starts to melt and crisp up.
- Crack the eggs directly on top of the feta.
- Season with salt, black pepper, and red pepper flakes (if using).

Fry Until Crispy:
- Cook for 3-4 minutes until the egg whites are set and the feta is golden and crispy.
- For a runny yolk, keep the heat moderate; for a firmer yolk, cook a bit longer.

- Carefully transfer the eggs to a plate.
- Sprinkle with fresh herbs and serve over toasted sourdough or pita.
